Ingredients
Crust
- 3 Cups Walnuts (soaked)
- 4 Dates (pitted and soaked)
- 1 Tbsp Organic Maple Syrup
- 2 Tbsp Ground Flaxseed
- 1/2 tsp Vanilla Extract
- 1/2 tsp Lemon Juice
- 1/8 tsp Himalayan Pink Salt
Filling
- 4 Cups Cashews(soaked)
- 1 Cup Carrots (Juiced)
- 2 Tbsp Coconut Butter
- 1 Tbsp Vanilla Extract
- 1/2 Cup Maple Syrup
- 3 Tbsp Pumpkin Pie Spice
- 1/8 tsp Himalayan Pink Salt
- Water (as needed)
Make it Happen
Preparation:
- Soak four cups of cashews for about one hour, set aside.
- In a separate bowl soak three cups of walnuts for about one hour.
- Soak four pitted dates in ¾ cup of water, for at least one hour, set aside
- Juice five carrots, set aside
Instructions for crust:
- In the food processor with the s-blade, first blend the dates, maple syrup, vanilla, lemon juice and salt.
- Then pulse in the walnuts and then the ground flaxseed. until it sticks together.
- Place crust mix into a round glass pie plate and pat-down with love
- Place it in the freezer while making the pie filling.
Instructions for filling:
- Drain and rinse cashews, place in a high-speed blender, add carrot juice, maple syrup, melted coconut butter (or coconut oil of needed), vanilla extract, pumpkin pie spice, salt and small amount of the date-water.
- Use the tamper in a circular motion to assist the high-speed blender, then blend pie filling until smooth.
Assemble with Love:
- Take the pie crust out of the freezer and pour the pie filling into the frozen crust. Then with a spatula, spread until smooth.
- Place the whole pie back into the freezer, until ready to serve.
- Remember to take the pie out of the freezer at least thirty mins before slicing.
