There is nothing better than a fresh baked apple pie to beckon in the fall season! So, we are bringing those amazing apple pie flavors into some warming oatmeal. Now you can have apple pie for breakfast - everyone's dream!

These oats have everything you need to enjoy a cozy fall morning! On top of tasting spectacular, these apple pie oats are packed with numerous health benefits. The recipe is chock full of antiinflammatory nutrients, fiber, vitamins, and minerals to prepare your body for the day! 

The walnuts, pumpkin seeds, flax seeds, and chia seeds provide your daily dose of omega-3s. This wonderful fatty acid helps to fight inflammation in the body, acute or chronic! The oats and apples provide copious amounts of fiber for a healthy gut and heart! The apples also have Vitamin C, Vitamin A, Potassium, and many other vitamins and minerals that feed the soul. 

This recipe is oil-free and refined sugar-free! You can also substitute the oats for either steel cut oats or gluten free oats, just follow the cooking times on the packaging. I used Mackintosh apples in this recipe because I like the texture, however, feel free to switch those out for your favorite type of apple!

APPLE PIE OATS

Servings: 2

Ingredients:

  • 1 ¼ cup rolled oats 
  • 1 cup water 
  • 1 cup plant milk (oat, soy, almond, etc.)
  • 1 Tbsp chia seeds
  • 1 Tbsp Flax meal 
  • ½ tsp cinnamon
  • ¼ tsp cardamom 
  • Pinch of salt
  • 1-2 apples, cubed
  • 2-3 Tbsp maple syrup (sweeten to taste)
  • 2 Tbsp walnuts, chopped
  • 1 Tbsp pumpkin seeds

 

Directions:

  • Bring water and milk to a simmer over medium-high heat in a sauce pot
  • Add oats once milk starts to bubble around the edges.
  • Add in chia, flax, apples, spices, and salt to the sauce pot. Cook oats according to packaging time. 
  • Once cooked through, add in maple syrup and nuts.
  • Serve with more toppings on top and enjoy!
